Today's Micro-Lot Roast
Ethiopia Geisha Honey Process
Roasting using firewood generates a uniquely humid heat convection, sealing rich oils within each bean instead of baking them dry.

Our name reflects the elements that shape our coffee. "Ember" represents our custom, slow-roasting flame. "Oak" signifies our custom roasting timber—traditional Pacific Northwest red oak wood. This meticulous roasting method develops flavors that standard gas roasters simply cannot replicate.
We never roast more than 15 pounds of coffee beans at one time. This gives our master roaster extreme control over the heating curve to maximize natural sweetness.
We partner directly with family farms in micro-regions. We pay over 50% above fair-trade thresholds to ensure sustainable cultivation and superior bean quality.
Located right in the heart of Seattle's creative artisan hub, our shop is meticulously designed with reclaimed timber walls, warm brass fixtures, and the aromatic woodsmoke of our roaster humming in the background.
